摘要:本发明涉及以谷氨酸氢钙为主要成分的无钠味精及其生产方法。无钠味精可以满足高血压、心脏病、糖尿病和肾炎患者以及老年人需要低钠补钙的要求,以控制钠离子的摄入量。本发明的无钠味精鲜度达到80—99%味精的鲜度,无苦味、无涩味,是一种营养调味品。
主权项:1、一种无钠味精的制造方法,包括将谷氨酸溶液用碱中和、活性炭脱色、过滤、低温浓缩、结晶、分离和真空干燥、混合等工序,其特征在于所述的谷氨酸溶液用碳酸钙在50-70℃中和至pH5.5-7.5以生成无钠味精-谷氨酸氢钙。
