摘要:本发明公开了一种葛仙米营养酥的制作方法,采用葛仙米、莲藕为原料,经过葛仙米、莲藕处理、切片、烘干、研磨成粉、调配、轧膜成型、烘烤、包装等步骤制作而成,本发明制作的营养酥营养成分全面、香酥可口、风味纯正、色泽鲜亮,以莲藕汁代替饮用水,不仅丰富了成品的营养物质,降低成品的含水量,延长了成品的保质期,本方法操作简单、易于实现。

主权项: 一种葛仙米营养酥的制作方法,其特征在于:采用以下步骤:A、葛仙米预处理:将葛仙米清洗干净,制得葛仙米片;B、烘干:将葛仙米片放入烘干设备中,使水分降低至葛仙米片重量的10~15%,后降温冷却,制成葛仙米干片;C、碾磨:将葛仙米干片放置研磨机内进行研磨,制成100‑120目的葛仙米粉;D、莲藕预处理:将莲藕清洗后去皮,切成小丁,用榨汁机榨汁,制成藕汁;F、调配:按精制面粉25‑30%、葛仙米粉12‑15%、玉米粉8‑12%、鸡蛋4‑6%、   藕汁15‑25%、色拉油10‑13%、木糖醇10‑12%的比例进行混合,搅拌均匀,搓揉制得面团;G、轧膜成型:将发酵后的面团放入模具中使其成型,再脱去模具,即得到酥坯;H、烘烤:将酥坯均匀放入刷过油的烘烤盘中,烘干设备中进行烘干,温度控制为210‑230℃,时间25‑30min,烘干后静置冷却;I、整形包装:将烘干后的酥坯自然冷却至35‑45℃时,再次整形后进行包装,制得营养酥成品。
