摘要:本发明公开了一种使用β-胡萝卜素化合物改善沙棘酒香气品质的方法,包括如下步骤1)β-胡萝卜素选择食品级的原料;2)将β-胡萝卜素用吐温-80乳化,乳化液配料的组成为吐温0.995%,水99%,β-胡萝卜素0.005%;3)乳化液配制方法;4)将β-胡萝卜乳化液加入沙棘酒或沙棘发酵醪;5)添加β-胡萝卜乳化液的沙棘酒进行陈酿。使用本发明所述方法可使得沙棘酒中降异戊二烯化合物β-环柠檬醛的含量达到0.11mg/L,沙棘发酵醪中降异戊二烯化合物紫罗兰酮达到0.11mg/L,2,2,6-三甲基环己酮含量达到0.07mg/L、3,5,5-三甲基-2-环己烯-1-酮0.06mg/L沙棘酒香气品质明显得到改善。

主权项:一种使用β‑胡萝卜素化合物改善沙棘酒香气品质的方法,其特征在于,包括如下步骤:1)β‑胡萝卜素选择食品级的原料;2)将β‑胡萝卜素用吐温‑80乳化,乳化液配料的组成为吐温0.995%,水99%,β‑胡萝卜素0.005%;3)乳化液配制方法:首先将β‑胡萝卜素溶解到二氯甲烷,β‑胡萝卜素与二氯甲烷的质量体积比为1∶2(mg/ML),然后在β‑胡萝卜素二氯甲烷溶液中加入吐温‑80,充分混合均匀,然后在旋转蒸发器中旋转蒸发,将二氯甲烷挥发干净,再加入蒸馏水或纯净水定容,二氯甲烷体积不计入乳化液体系的溶剂体系中;4)将β‑胡萝卜乳化液加入沙棘酒或沙棘发酵醪中,添加量为2%‑5%(v/v);5)添加β‑胡萝卜乳化液的沙棘酒进行陈酿,陈酿时间在25d以上,添加β‑胡萝卜乳化液的沙棘发酵醪进入后发酵环节,后发酵时间在15d以上,然后进入陈酿环节,陈酿时间不少于15d。
