摘要:Light-coloured high glutamate-contg. flavouring matl. hydrolysates are prepd. by aerobically fermenting lactose solns. or wheys with gluamic acid-rich yeasts, concentrating the fermentation liquors, opt. drying, hydrolysing with HCl, neutralising and filtering. Used as starting materials for prodn. of soups and other foods and substitutes for expensive Na glutamates. Yeast strains cultivated on wheys contain almost twice the amt. of glutamic acid present in beer yeasts e.g. 18-21% compared to 8-11% and yield a high quality, light-coloured hydrolysate free from yeast taste. Special treatment allows use of proteins in whey.
