摘要:一种啤酒糖化粉的制备方法,包括以下步骤:A、原料粉碎,将大麦芽、风味麦芽与焦香麦芽破碎后备用;B、糖化,制得麦醪;C、煮沸,过滤麦醪得到麦汁,加入啤酒苦花和啤酒香花,再加入麦汁质量0.2‑10%的普鲁兰多糖;D、浓缩制得麦汁浓缩液;E、干燥,制得啤酒糖化粉。通过本发明制得的啤酒糖化粉在使用中只需投入发酵罐中,加水冲调,接种酵母即可进行啤酒发酵,降低了家庭酿造啤酒的技术难度,方便实用,有利于精酿啤酒的推广。

主权项:一种啤酒糖化粉的制备方法,其特征在于,包括以下步骤:A、原料粉碎,将大麦芽、风味麦芽与焦香麦芽破碎后备用;B、糖化,向破碎后的原料中加入质量为原料3‑4倍的水,在45‑52℃下维持40min;再升温至62‑70℃,维持60min,制得麦醪;C、煮沸,过滤麦醪得到麦汁,将麦汁升温至100℃煮沸,加入质量为麦汁质量0.04‑1%的市售啤酒苦花和质量为麦汁质量0.02‑0.5%的市售啤酒香花,并持续煮沸60‑80min;之后停止加热、回旋沉淀5‑15min,静置15‑20min分离出热凝固物,向澄清的麦汁中加入麦汁质量0.2‑10%的普鲁兰多糖,充分溶解并混合均匀;D、浓缩,将步骤C中获得的液体浓缩至密度为0.7‑1.6g/mL,浓缩过程中采用冷凝回流装置收集香气物质,浓缩结束后将香气物质与浓缩液合并,制得麦汁浓缩液;E、干燥,将麦汁浓缩液进行干燥制得啤酒糖化粉。
