摘要:本发明公开了一种大蒜油的制备方法,它包括根据所需要大蒜油中二烯丙基三硫和二烯丙基二硫的含量的不同,将大蒜破碎成不同的粒度,加水保温酶解,水蒸气蒸馏提取挥发油,含水挥发油脱水,而得大蒜油。本发明在大蒜油的制备过程中可通过大蒜原料破碎粒度的调整,而使所得大蒜油中的二烯丙基三硫的含量增高,或使得二烯丙基二硫的含量增高,或是的二者的含量相对居中,从而满足不同治疗的医药产品或保健品的需要。

主权项:1.一种大蒜油的制备方法,其特征在于,它包括如下步骤:(1)取大蒜,将大蒜切成1~2mm的蒜片;或将大蒜粉碎成1~7mm的蒜颗粒;(2)破碎蒜加水,得破碎蒜水浆液,加水量为大蒜重量的3~9倍;(3)破碎蒜水浆液在提取容器内加热30~60℃,保温酶解1~5小时,得酶解的破碎蒜水浆液;(4)酶解的破碎蒜水浆液水蒸气蒸馏提取挥发油0.5~2小时,得含水挥发油,脱水,得大蒜油;其中,当大蒜切成1~2mm的蒜片时,得到的大蒜油中二烯丙基二硫含量在32.00%~24.00%,二烯丙基三硫含量在27.00%~31.00%;当大蒜破碎成3~5mm颗粒时,得到的大蒜油中二烯丙基二硫含量在23.00%~14.00%,二烯丙基三硫含量在32.00%~54.00%。
