摘要:本发明公开了一种玫瑰养颜猪肉干的制备方法,将新鲜猪肉洗净后切成肉块,将切好的肉块放入沸水中预煮35-45分钟,撇去浮沫,再将预煮后的肉块放入含有玫瑰酒以及干玫瑰的汤料中熬煮35-45分钟,熬煮完全后,取出沥干水分,将沥干水分的肉块经烘烤后即得。本发明制得的猪肉干配伍合理,具有食疗的保健作用,同时口感香醇,食用后唇齿留香,回味无穷。
主权项:一种玫瑰养颜猪肉干的制备方法,其特征在于:包括以下步骤:(1)将新鲜猪肉洗净后切成1‑4cm见方的肉块,将切好的肉块放入沸水中预煮35‑45分钟,撇去浮沫,再将预煮后的肉块捞出冷却备用;(2)再将预煮后的肉块放入汤料中熬煮35‑45分钟,熬煮完全后,取出沥干水分;每25000‑40000g所述的肉块需要配入由以下重量份原料制成的汤料:水适量、盐700‑800、生姜50‑60、花椒3‑4、八角3‑4、白芷3‑4、香叶3‑4、小茴香3‑4、丁香3‑4、砂仁3‑4、生姜20‑30、干玫瑰10‑20、红景天10‑20、玫瑰酒80‑100;所述的玫瑰酒由下述重量份的原料制得:白酒1200‑1800,干玫瑰花200‑250,桑葚40‑50,白糖80‑100;(3)将沥干水分的肉块经烘烤后即得。
