摘要：PURPOSE: Producing apparatus and method for instant whole bean curd having excellent texture are provided to enable small stores to produce the whole bean curd. CONSTITUTION: A producing method for instant whole bean curd comprises the following steps: inserting soybean powder and water into a first processing chamber(100); mixing the soybean powder and the water to obtain soymilk; heating the soymilk by supplying steam into the first processing chamber; supplying cooling water into a cooling space located outside the first processing chamber for cooling the soymilk at 55-70 deg C: transferring the cooled soymilk into a second processing chamber(200); adding transglutaminase, a protein linking enzyme into the soymilk, and stirring the mixture while heating the second processing chamber to maintain the temperature of the soymilk at 55-70 deg C; adding a coagulating agent into the fermented soymilk; filling the soymilk mixture into a container; and storing the soymilk mixture at room temperature at least more than 20 minutes for coagulating.
