摘要:PURPOSE: Baked noodles by baking cooked noodles in a preheated oven and a preparation method thereof are provided to secure chewy taste, mouth feel, and crispy external surface. CONSTITUTION: A method for preparing baked noodles comprises the following steps of: mixing 60-80wt% wheat flour, 15-40wt% starch or cereal powder, and 1-5wt% additive to prepare powder; mixing the powder and water at a ratio of 6~8 to 2~4; shaping, compounding, aging, extruding, cutting, and steaming the mixed powder to prepare cooked noodles; and uniformly spreading the cooked noodles in a pan and baking in a preheated oven at 190°C~230°C for 2-3 minutes. The weight of the cooked noodles is 100-250g. The pan adopts 1-5wt% cooking oil inside.
