摘要:The prods. are prepd. by cutting the potatoes into 2-3 mm slices or 4-5 mm prisms and washing for at least 1 hour in a stream of water which exceeds that needed for cleaning. frying is performed in oil or fat at around 200 deg.C. The frying is interrupted at least once when the potatoes have reached a water content of 10-25 wt% to let the potatoes rest and cool in air to a surface temp. of at least 50-60 deg.C. After the rest the potatoes are fried to completion.
