摘要:PURPOSE:To prevent the collapse of the shape of meat and to remarkably improve the yield of the product, by boiling a meat, applying the fat extracted by the boiling treatment to the meat or a paste product composed mainly of meat and freezing the fat-coated meat. CONSTITUTION:Meat or a paste product 2 composed mainly of meat and cut to a prescribed shape is boiled in a hot water tank4 to extract fat component from the meat. The extracted fat component is applied in the succeeding fat immersion tank 10 to the surface of said meat or the paste product composed mainly of meat after the extraction of fat to obtain a meat, etc., covered with the fat film layer. The product is frozen in a freezer 13. The process is effective to prevent the collapse of the shape of the product, improve the yield of the product, prevent the evaporation of water, etc., by the covering fat layer and prevent the deterioration of the quality during storage in frozen state.
