摘要：Prepn. of puree, esp. potato puree ready for the table. The puree is first conventionally prepd. ready for consumption and then packaged in foil or sheet bags of individual portion size and deep-frozen. When required, a bag or bags are thawed out by immersing in hot water and are then heated to a temp. somewhat above the serving or consumption temperature. The bag is then cut open and the contents are squeezed out, and decoratively prepd. for a serving. The high quality taste of potato puree can be preserve during deep-freezing. By packing it in individual bags, small portions for one or more persons can be taken from store and heated as required.
